I am a legitimate oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of these yet? (? They are some of the most well-known recipes on my blog cause they taste really sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
That means you're going to start with whole wheat flour (or fermented, if you want ) and instant oats (like those... or these for a gluten free edition!) . Instant oats are thinner and smaller than conventional rolled oats, and you are able to see them at canisters right alongside those old-fashioned oats at the grocery shop.
I probably seem like a broken record by now... But because I ? you and want your cookies to flip out perfectly plump and soft, I am reminding you again... Measure your yogurt and bread properly, using this technique or even a kitchen scale! (? That is the one I own and love. Too much of either side will make your biscuits taste cakey or dry, instead of chewy. This is especially true of the oats--they act like little sponges and soak up plenty of moisture out of the cookie dough!

Watch these bananas? And all those brown spots? If it comes to baking bananas, brown = amazing! I check here ? extra speckly bananas because they have so much glowing, bold taste --and additional natural sweetness! That is the minimum quantity of brown which I suggest. More is better!

These oatmeal biscuits are tender, chewy, and full of banana flavor! The recognizable comfy spices and plump raisins make them even more irresistible. They will keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last that long!
1 cup (100g) instant oats (fermented if mandatory and quantified like that )
3/4 cup (90g) whole wheat or gluten-free* flour (measured like that )
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
Using a spoon and spatula, drop the cookie dough to 15 curved scoops onto the prepared sheet, and flatten to the desired thickness and width using Vegan Chocolate Cookies - Loving It Vegan a spatula. Bake at 325°F for 10-12 minutes.
Notes: It's extremely important to measure both the wheat and oats correctly employing this technique or a kitchen scale. (? That's exactly the one I have and love!) Too much of either could dry out the cookies and render them cakey instead of chewy.
Instant oats are also known as quick-cooking or moment oats. They are available in large canisters, just like old-fashioned oats. They are not the ones at the tiny flavored packets of oatmeal. To create your own, add the same quantity of conservative yogurt into a food processor, and pulse 10-12 times or until the oats are approximately 1/4 into ? of the original size.
For the gluten-free flour, I recommend the following blend: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (such as this one!) Will also do the job, if measured like this.
